Signature ingredients for a signature café.

When at Moby, you’ll realise that our dishes are more than what you had initially anticipated. A combination of gastronomic innovation, science, nutrition, urban sophistication and rustic charm are what forms the backbone of our attitude toward food. Each and every single ingredient that goes into creating an item on our menu has been meticulously considered prior to claiming its place at Moby. Here are the four ingredients that feature in our signature dishes and throughout the Moby menu; you might be a little surprised to hear some of the reasoning behind our decision to include them.

Linseed/Flaxseed, Sesame and Chia

These four ingredients are what culminate as Moby’s seed mix. Not only does it taste delicious but the mix is a rich source of nutrients and antioxidants that work to promote a variety of health benefits.

Flaxseed is a seed that is high in fibre and antioxidants and assists in the reduction of inflammation and protect against the signs of ageing.

Sesame however, has the additional bon us of being full of zinc, which is an essential mineral for producing collagen and assisting in the repair of damaged body tissue.

Chia is incredibly high in fibre and is excellent for promoting digestive health, whilst also boosts brain health and bone strength through its high omega-3 fatty acid contents.

Citrus

At Moby, we absolutely love citrus. It is so versatile and can give a kick or freshen up almost anything. But one of the reasons we love citrus fruits so much is due them having the highest natural antioxidant activity of all fruits. This means that they are able to boost the immune system, improve bone strength and increase alertness and brain activity throughout the day.

Raw Vegetables

Raw vegetables are incredibly rich in antioxidants and fibre and have multiple health benefits aside from detoxification. Unknown to some, antioxidants such as vitamin C and folate are destroyed by heat and therefore it is vital that your diet works to replenish these stores. Additionally, raw foods contain a higher water content which therefore helps to hydrate the body – as it is not only water, but many foods that assist in hydration. Since such foods as raw vegetables are so incredibly close to their natural states, they are then able to provide us with higher quality and a higher level of energy.

Buckwheat

Some may not have heard of buckwheat before, so we will tell you. Buckwheat is the seed of a broadleaf plant related to rhubarb. It ranks low on the glycaemic scale (GI), is gluten free and high in essential amino acids, otherwise known as protein. We love buckwheat because it is so versatile but importantly, it is a cholesterol lowering seed, which helps to reduce and stabilise blood sugar levels.

As you can see, the four groups of ingredients listed above are loved by Moby not only because of their wonderful flavour, but their health benefits are also a huge draw card. We love being clever and inventive with food to please your palate but also please your body. There is more to Moby than meets the eye.
